These are Fujian’s lushest jasmine blossoms, picked late in spring and stored between layers of green tea leaves to dry naturally and impart some of their sharp sweetness onto them. As the flavour mellows, the jasmine is then used in infusions, either by itself or in a medley of herbs and spices, jazzing up the brew with its delicate petals.
